One Pot Haggerty

A hearty and comforting delicious meal!

Ingredients

 Serves 4.

3 tbsps of butter.

8 rashers of bacon cut into small pieces. (You can use turkey or vegan bacon if you like).

5 large potatoes chopped into quarters.

2 medium leeks sliced.

2 handfuls of mature cheddar cheese

Method

1. Heat oven to 180C/gas mark 4.

2. Sauté the leek in i/2 tbsp of butter.

3. Boil the potatoes until still firm enough to cut, (approximately 10 minutes).

4. Once boiled cut the potatoes into thin slices.

5. Take an oven proof pan and layer it with potatoes, then add a layer of bacon, then some leeks.

6. Do the same again and then top with cheese.

7. Dab small chunks of butter over the top.

8. Pop foil over the pan and heat through in the oven for 20 mins.

9. Take the foil o and put under the grill for 5 mins to crisp the top, (optional).
