
Healthier Fruit Cake
Let’s get baking with this lovely cake!
Ingredients
Makes 1 cake.
4 tbsps of dried fruit.
2 heaped tbsps of honey.
2 handfuls of bran flakes.
3 tbsps of orange juice.
1 tsp of baking powder.
2 tbsps of wholemeal flour/plain flour.
1 pinch of ginger (optional).
1 pinch of nutmeg (optional).
Butter for greasing.
Method
1. Preheat oven 180C/gas mark 4.
2. Mix fruit, honey, bran flakes & orange juice, leave for 10 mins.
3. In a separate bowl mix the flour, baking powder, ginger and nutmeg.
4. Add the flour mixture to the fruit mixture and combine thoroughly. Make sure there are no flour lumps.
5. Pop the mixture into a greased bread tin.
6. Cook for 15-20 mins until it starts to brown (pop a skewer in the middle of the cake – if it comes out without any mixture on it then it’s done.)
7. When it’s cooked take the cake out of the oven, make a
few little holes with a skewer and drizzle a little honey over.
8. Leave to cool then enjoy.
