Double Potato Pie

My most requested recipe, a must try!

Ingredients

Makes 12 pies.

2 medium sweet potatoes.

2 medium white potatoes.

2 tbsps of grated cheddar.

1 small tin of sweetcorn.

5 tbsps of frozen peas.

500g short crust pastry.

1 tbsp of milk.

Some flour for rolling.

Method

1. Heat oven to 190C/gas mark 5.

2. Pop the potatoes into a microwave to soften, (approximately 20 minutes on high).

3. Once the potatoes are cooked, peel, then mash in a bowl.

4. Add the cheese, sweetcorn and peas to the potato mixture.

5. Mix thoroughly and pop to one side.

7. Grease a baking sheet or line with a non-stick liner.

8. Roll out the pastry 1cm thick on a floured surface.

9. Cut out circles and brush with milk.

10. Put a heaped teaspoonful of the potato mixture on one side of each circle, fold the pastry over to enclose the filling and crimp the edges firmly to seal.

11. Put the pies on the baking sheet and bake for 15 mins until golden brown.

12. Check at 10 mins to make sure they aren’t burning.

13. Leave to cool on a rack.
