Cheese & Veg Muffins

The perfect snack for the fridge!

Ingredients

Makes 12 muffins.

4 eggs.

1 handful of grated cheese.

1 handful of chopped cherry tomatoes.

1 handful of spinach torn into small pieces (optional).

1 handful of chopped mushrooms (optional).

1 handful of chopped ham (optional).

Method

1. Preheat oven to 200C/gas mark 6.

2. Grease a standard non-stick 12 slot muffin pan with butter.

3. Crack the eggs in a bowl and whisk.

4. Add all the remaining ingredients and mix them.

5. Spoon the ingredients into the muffin tin.

6. Put in the oven to cook for 13-15 mins.

7. Eat hot or cold.
