Winter Ratatouille

The perfect winter warmer!

Ingredients

Makes 1 bowl.

1 tsp onion diced.

1 clove of garlic minced.

1 Handful of Cherry tomatoes roughly diced.

1 Handful of aubergine.

1 Handful of courgettes.

2 tbsp of chopped tomatoes.

2 tbsp chickpeas.

Glug of olive oil or vegetable oil.

Couple of fresh basil leaves or 1 teaspoon dried basil.

Method

1. Heat the oven to 170 degrees.

2. Drizzle some olive oil into a pan.

3. Sauté the onion and garlic.

4. In an ovenproof bowl mix the rest of the ingredients and put in the oven for 15-20 mins. Alternatively pop in a saucepan and heat through gently for 15 mins. Add a little water if it’s getting too dry.

5. Once the ratatouille has cooked spoon through some cheese.

6. Once the sauce on the hob is heated through. Blitz and add to pasta.

7 Add cheese if you want.

8. Enjoy hot or cold.
